New series where I will showcase my favorite Filipino food recipes that I have adopted for my family’s palate and taste. I always cook with the freshest or frozen vegetables, and I’m also particular about purchasing meat that has no antibiotics or growth hormones added. My husband loves potatoes, I NEED my steamed or fried rice from time to time, and our toddler loves carbs of any kind.
What I love the most about Filipino food, is how once anyone tries a popular dish, they become an instant fan and want to try more. Filipino food is very flavorful, layers of salty, sweet, sour, and sometimes spicy. I am also a huge fan of sauces and Filipino food has many kinds for various uses and reasons. There are many influences in Filipino cooking, such as Spanish and Malaysian, due to our ancestors, as well as, Chinese. Therefore, the flavors are never too foreign for anyone. There are complicated stews that take hours to make and then there are simple dishes such as this one, that are effortless to put together. Garlic and onions are prevalent in most dishes, and I am a huge fan of both. My husband hates to eat onions, with regards to their texture and also the smell when eating them raw. For this reason, I use shallots and chop them up fine. He loves that I can hide it away from him and that I don’t miss out on what I love.

This is a favorite dish of mine to cook, because its easy for our toddler to feed himself, and it comes together in no time. I’ve made this with ground beef, ground beef and pork together, and also ground turkey. I have also used chicken stock in place of the water and bouillon when I have it on hand.

Ingredients:
- 2 tablespoons canola oil
- 6 cloves garlic, crushed
- 1 medium shallot, minced
- 1½ lbs ground pork
- 12 ounces tomato sauce
- 1 cup water (or you may use chicken/beef stock, but omit the bouillon)
- 2 teaspoons beef bouillon or 1 beef bouillon cube
- 1½ cups potatoes, diced
- 1½ cups frozen mixed vegetables
- 2 teaspoons granulated sugar
- dash of Worcestershire sauce
- 4 boiled eggs, shelled (optional)
- Garlic Salt and Pepper to taste
- Heat a saute pan and pour in the canola oil.
- When the oil is hot enough, add the garlic to the pan and sauté until golden.
- Add the shallot and sauté until translucent.
- Add the ground pork and cook for 5 minutes.
- Add the beef bouillon and water (or stock), and tomato sauce, stir and bring to a boil. Reduce heat to medium low and simmer for 15 minutes.
- Add the mixed vegetables and potatoes, then stir. Simmer for 30 minutes or until potatoes are tender.
- Add garlic salt, pepper, Worcestershire sauce, and sugar, then stir and continue to simmer for 5 more minutes.
- Slice the boiled eggs in quarters, add to pan and turn off the heat.
- Serve on its own topped with an egg, or over steamed rice
